Mary's Almond Ginger Biscotti

1 cup/4oz spelt or plain (wheat) flour
2 cup/8oz ground almonds (i used whole ground almond meal but the
ordinary ground almonds will also work)
4 egg medium whites or 2 whole eggs
1 cup/4oz crystalized ginger or more to taste.
Pinch Salt
1 teaspoon bread soda

optional:
1 teaspoon or more powdered ginger, if like me you like it spicy.
Sugar to taste. Usually the crystalized ginger provides enough for me.
A few rough chopped almonds to give extra texture.

Preheat oven to 390ºF or so. ie a fairly hot oven.
Mix all dry ingredients together. Add egg and mix until the dough comes together. Should be like a moist soda bread dough in moisture level. Don't over mix. Shape into a long loaf shape on a baking tray.

Bake for 25-30 min.
Remove and let cool on a wire rack.


I tend to like my biscotti really crisp so I wait until the loaf is cool and then I slice into the final biscotti slices with a sharp knife and return to oven on a flat tray and dry them out slowly at 140º F or so.
Alternatively, you can slice them when cool enough and return to oven
at around 250º F for 10 or 15 min.

  1. Things to note:
    Spelt flour absorbs less liquid than a wheat flour so you may need
    more egg than I do if you use wheat flour.
  2. The High altitude I live at (6000 ft) also needs added liquid so experiment at the balance that works for you..
  3. You may need to lower the temp slightly also for the sea level
    altitude or change the baking time a little.
  4. If you add sugar, you may need also to lessen the liquids

In other words, you will have to experiment a little to see what
works best for you simply because of the altitude change.
These work well at 6000 feet!!

Substitutions and variations

  1. Hazelnuts (instead of almond) and Chocolate chips (instead of ginger).
    Add a little vanilla to the egg also. And needs sugar.
  2. Almond and Chocolate chip and cherry (substitute choc and cherry for
    ginger. Add vanilla & sugar.
  3. Cashew and orange (candied orange peel or even grated orange peel.
    Lessen the eggs, add sugar and vanilla)
